It is an impressive yet easy-to-prepare dish that delivers restaurant-quality results in under 40 minutes, making it an ideal choice for both busy weeknight dinners and cozy weekend gatherings.
Ingredients
4 boneless, skinless chicken breasts
1 large Honeycrisp apple, thinly sliced
4 oz Brie cheese, sliced into 4 rectangles
1/2 cup pure maple syrup
2 tbsp apple cider vinegar
1 tsp dried thyme
2 tbsp olive oil
Salt and black pepper to taste
Instructions
Use a sharp knife to cut a horizontal pocket into the side of each chicken breast, taking care not to cut through the other side.
Stuff each chicken breast pocket with a slice of Brie and a few apple slices, securing the opening with toothpicks if needed.
Rub the exterior of the chicken breasts evenly with olive oil, salt, and black pepper.
Heat a large skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown.
Whisk together the maple syrup, apple cider vinegar, and dried thyme in a small bowl.
Pour the glaze over the chicken in the skillet, reduce the heat, and simmer for 8-10 minutes until the chicken is fully cooked and the glaze has thickened into a glossy coating.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm gently on the stove with a small splash of water or broth to loosen the glaze. You can substitute Brie with Camembert or goat cheese if you prefer a sharper flavor profile.
