Ingredients
1 lb lean ground beef
1 packet taco seasoning (alcohol-free)
1 bag (12 oz) restaurant-style tortilla chips
2 cups shredded Mexican-blend cheese
1/2 cup black beans, drained and rinsed
1/4 cup red onion, finely diced
1 jalapeño, thinly sliced
1/2 cup fresh cilantro, chopped
1 cup sour cream
1/2 cup chunky salsa
Instructions
Heat your large skillet over medium-high heat.
Add the ground beef and cook, breaking it into crumbles for 6-8 minutes until browned; drain excess fat.
Stir in the taco seasoning and a splash of water, simmering for 2 minutes until thick and glossy.
Preheat your oven to 400°F (200°C).
Arrange the chips in a single, slightly overlapping layer on a large rimmed baking sheet.
Top the chips evenly with the seasoned beef, black beans, and half of the shredded cheese.
Repeat with another layer of chips and the remaining cheese.
Bake for 5-7 minutes until the cheese is bubbling and melted.
Remove from oven and top with fresh red onion, jalapeño slices, cilantro, sour cream, and salsa. Serve immediately.
Notes
Keep chips crunchy by assembling right before baking. For a lighter version, use extra-lean beef or turkey. Ensure your taco seasoning packet is certified free of alcohol-derived ingredients.
