3 lbs Yukon Gold potatoes, peeled and quartered
1/2 cup unsalted butter, softened
1/2 cup sour cream
1/2 cup whole milk or heavy cream
1 1/2 cups sharp cheddar cheese, shredded
6 strips turkey bacon, cooked and crumbled
1/2 cup green onions, finely sliced
1 tsp garlic powder
Salt and black pepper to taste


Instructions

Place potatoes in a large pot and cover with cold water and a pinch of salt.
Bring to a boil, then reduce heat and simmer for 15-18 minutes until fork-tender.
While potatoes cook, crisp turkey bacon in a skillet, cool, and crumble into pieces.
Drain potatoes well and return to the warm pot for 1 minute to dry.
Mash potatoes until smooth using a masher or mixer.
Gradually fold in the butter, sour cream, and milk until creamy.
Stir in 1 cup of cheddar, half of the turkey bacon, and half of the green onions.
Season with garlic powder, salt, and pepper.
Transfer to a bowl and garnish with the remaining cheese, bacon, and green onions.

Notes

Storage: Keep leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of milk.
