Ingredients
1 lb smoked beef sausage, sliced into rounds
3 cups russet potatoes, peeled and diced into 1-inch cubes
1 medium yellow onion, finely diced
3 cloves garlic, minced
4 cups beef bone broth
2 cups heavy cream or half-and-half
2 tablespoons unsalted butter
1 teaspoon dried thyme
Salt and black pepper to taste
Fresh parsley, chopped for garnish
Instructions
