Description

This perfectly moist turkey breast recipe is the ultimate solution for a stress-free family dinner. By using a fragrant herb butter infusion tucked under the skin and a precise roasting technique, you achieve golden-brown, crispy skin and incredibly succulent meat. It is a gourmet-quality centerpiece that is tender, savory, and bursting with flavor, making it perfect for busy families who want an impressive meal without spending all day in the kitchen.

Ingredients

Scale

1 whole bone-in turkey breast (approx. 4–5 lbs)
4 tablespoons unsalted butter, softened
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme leaves
1 teaspoon kosher salt
1/2 teaspoon cracked black pepper
1 small onion, quartered
1 lemon, halved

Instructions

Preheat your oven to 375°F (190°C).
Pat the turkey breast completely dry with paper towels to ensure the skin gets crispy.
In a small bowl, combine the softened butter, olive oil, minced garlic, rosemary, thyme, salt, and pepper until it forms a smooth paste.
Carefully loosen the skin from the turkey breast and spread two-thirds of the herb butter mixture under the skin, then rub the remainder over the outside.
Place the onion quarters and lemon halves in the pan under the rack to infuse moisture and flavor.
Roast for 60 minutes, checking at the 50-minute mark to ensure the internal temperature reaches 165°F in the thickest part.
Remove from the oven, transfer to a cutting board, and tent loosely with foil to rest before carving.

Notes

Always use a meat thermometer to ensure the turkey reaches 165°F for safety. Resting the meat for at least 15 minutes before carving is essential to keep the juices locked inside.
