Ingredients
4 large orange bell peppers
1 lb ground beef
1 cup cooked white rice
1/2 cup finely diced onion
2 cloves garlic, minced
1 cup tomato sauce
1 tsp dried oregano
1 tsp paprika
1 cup shredded cheddar cheese
Salt and black pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers, remove seeds, and carve triangle eyes and a jagged mouth on each pepper.
In a large skillet over medium heat, brown the ground beef with diced onions until fully cooked.
Drain excess fat, add garlic, oregano, and paprika, and sauté for 1 minute.
Stir in the tomato sauce and cooked white rice, simmering for 3 minutes until well combined.
Stuff each pepper with the meat and rice mixture and stand them upright in a baking dish.
Cover with foil and bake for 25 minutes.
Remove the foil, top each pepper with shredded cheddar cheese, and bake for an additional 10 minutes until the cheese is melted and bubbling.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven. You can swap ground beef for ground chicken or ground turkey for a leaner option.
