Ingredients
1.5 lbs chicken breast, cut into bite-sized cubes
2 large sweet potatoes, peeled and diced into 1-inch cubes
2 tbsp olive oil
1 tsp smoked paprika
1/2 cup honey
1 tbsp chili flakes
1 tbsp apple cider vinegar
2 cups cooked quinoa or jasmine rice
Fresh scallions for garnish
Sesame seeds for garnish
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Toss diced sweet potatoes with olive oil and a pinch of salt on a baking sheet and roast for 20-25 minutes.
Season chicken cubes with salt, pepper, and smoked paprika.
Heat oil in a large skillet over medium-high heat and cook chicken for 6-8 minutes until golden and cooked through.
Whisk together honey, chili flakes, and apple cider vinegar in a small bowl.
Pour the sauce over the chicken in the skillet during the last minute of cooking and toss until glazed.
Divide cooked grains into bowls, top with sweet potatoes and chicken, then garnish with scallions and sesame seeds.
Notes
Store the chicken and potatoes in separate airtight containers in the fridge for up to 3 days to maintain texture and prevent the chicken from becoming soggy. Adjust the amount of chili flakes to control the spice level according to your preference.
