Serve chilled as a classic treat or use as a base for parfaits and trifles.

Ingredients

Scale

2 cups milk
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1/2 teaspoon non-alcoholic vanilla extract
2 large egg yolks

Instructions

In a medium saucepan, whisk together milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
In a small bowl, whisk together egg yolks and vanilla extract. Temper the egg yolks by slowly pouring the warm milk mixture into the eggs, whisking constantly.
Return the mixture to the saucepan and cook for an additional 2 minutes, stirring constantly, until the pudding thickens.

Notes

Store in an airtight container in the refrigerator for up to 3 days.
Substitute non-alcoholic vanilla extract with almond extract for a different flavor profile.
Use as a base for chocolate or caramel pudding by adding cocoa powder or caramel sauce.
Chill for 2-4 hours before serving for optimal texture.
Can be made ahead of time and refrigerated.
