Description

Ingredients

1 1/2 cups warm water
1 tablespoon active dry yeast
2 teaspoons sugar
1 teaspoon kosher salt
4 1/2 cups all-purpose flour
1/2 cup baking soda
Coarse sea salt for topping
4 tablespoons unsalted butter, melted


Instructions

Whisk the warm water, sugar, and yeast in a large bowl and let sit for 5 minutes until foamy.
Add the flour and salt to the yeast mixture and stir until a dough forms.
Knead the dough on a floured surface for 5 minutes until smooth and elastic.
Divide the dough into 6 equal pieces and roll each into a long rope.
Cut the ropes into 1-inch bite-sized pieces using a sharp knife.
Bring a large pot of water to a boil and stir in the baking soda.
Boil the dough bites in batches for 30 seconds each.
Transfer the bites to a parchment-lined baking sheet.
Brush the bites with melted butter and sprinkle generously with coarse salt.
Bake at 425°F (220°C) for 8-10 minutes until deep golden brown.

Notes

Do not skip the baking soda bath as it is essential for the signature mahogany color and texture.
Store leftovers in an airtight container at room temperature for up to 2 days.
Freeze bites for up to a month and reheat in an oven or air fryer to restore crispness.
