Ingredients
1 1/2 pounds ground beef, 80/20 blend
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon neutral oil (avocado oil)
8 slices cheddar or American-style cheese
4 burger buns
2 tablespoons unsalted butter, softened
1 cup shredded lettuce
1 large tomato, sliced
1/2 small red onion, thinly sliced
1/3 cup dill pickle chips
1/4 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 teaspoon dill pickle juice
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Instructions
Make the sauce: In a bowl, stir mayonnaise, ketchup, mustard, pickle juice, smoked paprika, and garlic powder until smooth. Set aside.
Prepare toppings: Shred lettuce, slice tomato and red onion, and organize toppings for quick assembly.
Portion the beef: Divide ground beef into 8 loose 3-ounce patties.
Heat a cast iron skillet over medium heat, then add oil. Press patties firmly into the hot skillet and cook 2-3 minutes per side for medium doneness.
Top each patty with cheese slices during the last minute of cooking.
Toast buns in the skillet with softened butter for 1-2 minutes until golden.
Assemble burgers: Layer lettuce, tomato, red onion, and pickles on buns. Spread sauce on bottom buns, add patty, cheese, and top bun.
