Ingredients
2 lbs fresh green beans, trimmed and cut into 2-inch pieces
4 strips turkey bacon, diced
1 lb cremini mushrooms, sliced
3 cloves garlic, minced
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups vegetable broth
1 cup heavy cream
1 teaspoon soy sauce
1/2 teaspoon black pepper
1.5 cups crispy fried onions
Instructions
Blanch the green beans in boiling salted water for 4 minutes until tender-crisp, then drain and plunge into ice water.
Cook the diced turkey bacon in a skillet until crispy, then remove and set aside.
In the same skillet, melt butter and sauté mushrooms for 5-7 minutes until browned, then add garlic and cook for 1 minute.
Sprinkle flour over mushrooms and stir for 2 minutes to cook out the raw flavor.
