Ingredients
2 lbs ground beef (85/15 lean)
1 cup plain breadcrumbs
1/2 cup milk
1/2 cup finely diced yellow onion
2 cloves garlic, minced
1 large egg, lightly beaten
1/4 cup chopped fresh parsley
1 tsp salt
1/2 tsp black pepper
1/2 cup tomato ketchup (for glaze)
2 tbsp brown sugar (for glaze)
1 tsp apple cider vinegar (for glaze)
Instructions
Preheat your oven to 375°F (190°C) and grease a 9×5 inch loaf pan.
In a small bowl, soak the breadcrumbs in milk for 5 minutes until fully absorbed.
In a large mixing bowl, combine the ground beef, soaked breadcrumbs, onion, garlic, egg, parsley, salt, and pepper.
Mix the ingredients by hand until just combined, being careful not to overwork the meat.
Press the mixture evenly into the prepared loaf pan.
In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar.
Spread the glaze evenly over the top of the meatloaf.
Bake for 50–55 minutes, or until the internal temperature reaches 160°F.
Let the meatloaf rest for 10 minutes before slicing to allow the juices to redistribute.
