2 lbs ground beef
1 medium onion, finely diced
3 cloves garlic, minced
2 cups cooked long-grain white rice
1 can (15 oz) black beans, rinsed and drained
1 tbsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
1/2 tsp black pepper
2 cups shredded cheddar or Monterey Jack cheese
8 large flour tortillas


Instructions

Heat a large skillet over medium-high heat and add the ground beef and diced onions.
Cook for 8–10 minutes, breaking the meat apart until browned and onions are translucent.
Stir in the minced garlic, chili powder, cumin, paprika, salt, and pepper and cook for 1 minute until fragrant.
Add the rinsed black beans to the skillet and stir to combine, then remove from heat.
To assemble, lay a tortilla flat and add a scoop of the beef mixture, a scoop of rice, and a generous sprinkle of cheese in the center.
Fold the sides of the tortilla inward, then roll from the bottom up, tucking tightly to seal.
For a crispy finish, place the wrapped burritos back in a hot skillet for 1 minute per side until golden brown and the cheese is melted.
