Description

This vibrant and healthy lunch solution combines high-quality tuna with the zesty crunch of fresh vegetables and sweet peas. Creamy Greek yogurt replaces traditional mayo for a lighter, protein-packed dressing that is perfect for meal prep, office lunches, or a quick post-workout refuel. It is simple to prepare, requires no cooking, and is completely free of pork and alcohol.

Ingredients

Scale

2 cans (5 oz each) wild-caught tuna in water, drained
1 cup frozen sweet peas, thawed
1/4 cup finely diced red onion
1/2 cup Greek yogurt (plain, non-fat)
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1/4 teaspoon garlic powder
Salt and black pepper to taste
1 tablespoon chopped fresh dill (optional)

Instructions

Place tuna and thawed sweet peas into a colander and drain thoroughly.
In a medium mixing bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, garlic powder, and fresh dill.
Add the drained tuna, peas, and diced red onion to the dressing.
Fold ingredients together until evenly coated.
Taste and season with salt and pepper as needed.
Serve immediately or store in the refrigerator.

Notes

Store in an airtight container in the refrigerator for up to 3 days. For added crunch, stir in diced celery or cucumber. Add a chopped hard-boiled egg for an extra protein boost.
