Ingredients
1.5 lbs ground beef (80/20 lean-to-fat ratio)
1/2 cup breadcrumbs
1 large egg
1 small onion, finely minced
2 cloves garlic, minced
2 cups low-sodium beef broth
1 cup heavy cream
2 tablespoons fresh dill, chopped
1 tablespoon cornstarch mixed with 2 tablespoons water
2 tablespoons avocado oil or butter
Salt and black pepper to taste
Instructions
In a large bowl, combine ground beef, breadcrumbs, egg, half the minced onion, and a pinch of salt and pepper.
Shape the mixture into 4 equal-sized oval patties.
Heat oil in a large skillet over medium-high heat.
Add patties and sear for 4-5 minutes per side until deeply browned and cooked through, then remove and set aside.
In the same skillet, add the remaining onion and garlic and sauté for 2 minutes.
Pour in the beef broth and scrape the bottom of the pan to release browned bits; simmer for 3 minutes.
Reduce heat to low, stir in the heavy cream and fresh dill.
Add the cornstarch slurry while stirring constantly until the sauce is thick and glossy.
Return patties to the pan and spoon the sauce over them, simmering for an additional 2 minutes before serving.
Notes
Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of water if the sauce becomes too thick. Substitutions: Swap beef for ground turkey or chicken for a leaner meal, but adjust cooking time as poultry may cook faster.
