Ingredients

4 cups all-purpose flour
2 tsp kosher salt
2 tsp instant yeast
2 cups warm water
3 tbsp extra virgin olive oil
1 cup shredded Gruyère cheese
2 tbsp fresh thyme leaves
1 tsp flaky sea salt
1/2 cup finely diced turkey bacon (browned)


Instructions

In a large bowl, whisk together flour, salt, and yeast.
Pour in warm water and olive oil, stirring until a shaggy dough forms.
Cover the bowl and let the dough rise in a warm spot for 60 minutes until doubled in size.
Drizzle your baking pan with olive oil, transfer the dough to the pan, and gently stretch it to the corners.
Let the dough rise in the pan for another 20 minutes.
Use your fingers to create deep indentations across the dough.
Drizzle with more olive oil, then sprinkle evenly with shredded Gruyère, fresh thyme, and diced turkey bacon.
Bake at 425°F (220°C) for 20-25 minutes until the cheese is bubbling and the crust is golden brown.

Notes

Keep leftovers in an airtight container at room temperature for 2 days or freeze for up to a month.
If you do not have Gruyère, fontina or aged white cheddar are excellent substitutes.
Be generous with the olive oil in the pan to ensure the bottom crust fries to perfection.
