Ingredients
1 lb lean ground beef
8 oz egg noodles
16 oz white button mushrooms, sliced
1 medium yellow onion, finely diced
2 cloves garlic, minced
2 cups beef broth (low sodium)
1 cup sour cream
2 tablespoons all-purpose flour
1 tablespoon olive oil
1 teaspoon paprika
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Bring a large pot of salted water to a boil and cook the egg noodles according to package instructions until al dente; drain and set aside.
Heat olive oil in a large skillet over medium-high heat, add the ground beef, and cook until browned; remove beef from the pan and set aside.
In the same skillet, sauté the mushrooms and onions for 5-8 minutes until golden; stir in the minced garlic and cook for 1 minute.
Sprinkle flour over the vegetables and stir for 1 minute; slowly pour in the beef broth while whisking constantly and simmer for 3-5 minutes until thickened.
Return the browned beef to the skillet, reduce heat to low, and stir in the sour cream until smooth and warmed through.
Season with salt, pepper, and paprika; serve hot over the cooked egg noodles, garnished with fresh parsley.
Notes
Do not allow the sauce to boil once the sour cream is added to prevent it from curdling. Serve immediately for the best texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
