Ingredients
6 ears fresh corn, husks and silk removed
3 tablespoons unsalted butter, melted
1 tablespoon olive oil
1 tablespoon fresh lime juice
1 teaspoon lime zest
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh cilantro or parsley
Fresh lime wedges, for serving
Instructions
Preheat the grill to medium-high (400°F to 450°F). Remove husks and silk from corn and pat dry.
In a small bowl, whisk melted butter, olive oil, lime juice, lime zest, smoked paprika, garlic powder, salt, and pepper until smooth.
Brush half the seasoned butter over all sides of the corn.
Grill the corn for 10 to 12 minutes, turning every 2 to 3 minutes, until kernels are tender and charred in spots.
Brush the corn with the remaining butter while warm.
Transfer to a serving platter, sprinkle with cilantro or parsley, and serve with lime wedges.
Notes
Use a stovetop grill pan if an outdoor grill is unavailable.
The lime zest adds brightness; substitute with finely grated citrus zest (lemon or orange) if preferred.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
