Ingredients
1 1/2 pounds boneless skinless chicken breasts, cut into 1 1/2-inch cubes
3 tablespoons olive oil
3 tablespoons fresh lemon juice
2 teaspoons honey
3 garlic cloves, finely minced
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 red bell pepper, cut into 1 1/2-inch pieces
1 yellow bell pepper, cut into 1 1/2-inch pieces
1 medium red onion, cut into 1 1/2-inch chunks
1 medium zucchini, sliced into thick half-moons
8 wooden or metal skewers
2 tablespoons chopped fresh parsley, for garnish
Lemon wedges, for serving
Instructions
Soak wooden skewers in water for 30 minutes to prevent burning
Dice chicken into 1 1/2-inch cubes and pat dry
In a bowl, whisk together olive oil, lemon juice, honey, garlic, smoked paprika, oregano, cumin, salt, and pepper until smooth
Add chicken to marinade, mix well, and refrigerate for 30 minutes
Thread chicken cubes and veggies onto skewers
Preheat grill or grill pan to medium-high heat
Grill kabobs 5-7 minutes per side until chicken reaches 165°F
Garnish with parsley and lemon wedges
