Description
Indulge in the ultimate holiday centerpiece with this Gingerbread Tiramisu. This no-bake dessert perfectly captures the warmth of cozy holiday spices by blending crisp gingerbread cookies with a rich, velvety mascarpone cream. It is a sophisticated, beginner-friendly treat that tastes like a holiday hug in a bowl, making it ideal for festive gatherings.
Ingredients
2 cups strong brewed coffee, cooled completely
1 teaspoon pure vanilla extract
24–30 crisp gingerbread cookies or gingersnap biscuits
16 oz mascarpone cheese, softened
1 cup heavy whipping cream
1/2 cup powdered sugar
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Cocoa powder or extra crushed gingerbread for dusting
Instructions
In a shallow dish, combine the cooled coffee and vanilla extract.
In a large chilled bowl, whip the heavy cream until stiff peaks form.
In a separate bowl, beat the softened mascarpone with powdered sugar, ground ginger, cinnamon, and cloves until smooth.
Gently fold the whipped cream into the mascarpone mixture until combined.
Quickly dip each gingerbread cookie into the coffee mixture for one second, being careful not to soak them.
Arrange a single layer of dipped cookies in a 9×9 inch baking dish.
Spread half of the cream mixture over the cookies.
Repeat the process with a second layer of cookies and the remaining cream.
Cover and refrigerate for at least 4 hours, or overnight for the best flavor.
Dust with cocoa powder or extra cookie crumbs just before serving.
Notes
Ensure the coffee is completely cool before dipping to prevent the cookies from turning into mush. The longer the dessert chills, the better the flavors meld together. Store covered in the refrigerator for up to 3 days.
