Ingredients
2 lbs Yukon Gold potatoes, peeled and chopped
1/2 cup whole milk
4 tbsp unsalted butter
1 lb ground beef
1/2 cup panko breadcrumbs
1/4 cup finely diced onion
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
Black sesame seeds or tiny bits of olive for ghost eyes
Instructions
Place peeled potatoes in a large pot of salted water, bring to a boil, and cook for 15 minutes until fork-tender, then drain.
Return potatoes to the pot, add butter and milk, and mash until smooth and firm enough to hold a shape.
In a mixing bowl, combine ground beef, breadcrumbs, onion, and spices, then form into 12 even-sized meatballs.
Heat olive oil in a skillet over medium-high heat and sear the meatballs for 8-10 minutes, turning until browned and cooked through.
Place meatballs on a serving platter.

Notes
