Ingredients
2 cups all-purpose flour
1 tablespoon instant yeast
1 teaspoon sugar
1 teaspoon salt
1 cup warm water (110°F)
3 tablespoons extra virgin olive oil, divided
3 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
4 slices crispy turkey bacon, crumbled (optional)
Flaky sea salt for sprinkling
Instructions
Whisk together warm water, sugar, and yeast in a large bowl and let sit for 5 minutes until foamy.
Gradually stir in flour, salt, 1 tablespoon of olive oil, and half of the rosemary until a sticky dough forms.
Cover the bowl with a clean cloth and let the dough rise in a warm spot for 20 minutes.
Grease a 12-cup muffin tin with olive oil.
Mix the remaining olive oil, minced garlic, and the rest of the rosemary in a small bowl.
Spoon the dough evenly into the muffin tin.
Create small dimples in the top of each muffin with your fingers.
Drizzle the garlic-rosemary oil over the muffins and top with crumbled turkey bacon if using.
Bake at 400°F (200°C) for 18-20 minutes until golden brown.
Notes
Store in an airtight container at room temperature for up to 2 days or freeze for up to 1 month. You can substitute the turkey bacon with diced smoked chicken strips for a meatier version.
