Ingredients
1 1/2 cups long-grain white rice, rinsed and drained
3 tablespoons unsalted butter
1 tablespoon olive oil
1 small yellow onion, diced
5 garlic cloves, minced
2 1/4 cups low-sodium chicken or vegetable broth
1 teaspoon kosher salt
1/4 teaspoon black pepper
1 bay leaf
2 tablespoons fresh parsley, chopped
1 teaspoon lemon zest, optional
1 tablespoon fresh lemon juice, optional
Instructions
Rinse and drain rice in a fine-mesh sieve until water runs clear
Dice onion into small cubes and mince garlic
Heat butter and olive oil in a medium saucepan over medium heat
Sauté onion until soft and translucent (3-4 minutes)
Add garlic and cook 30-45 seconds until fragrant
Add drained rice and stir for 3-4 minutes until glossy and aromatic
Stir in broth, salt, pepper, and bay leaf
Bring to a boil, then reduce heat to low, cover, and simmer 15-20 minutes
Remove bay leaf, fluff with a fork, and stir in parsley, lemon zest, and juice
Notes
Use vegetable broth for vegetarian version
Adjust liquid amount if using brown rice
Add frozen peas or chopped carrots during simmer for extra flavor
Let rice rest 5 minutes before fluffing for optimal texture
