Ingredients
1 1/2 pounds baby gold potatoes, halved
3 tablespoons olive oil
2 tablespoons unsalted butter, melted
4 cloves garlic, finely minced
1/2 cup freshly grated Parmesan cheese
1 teaspoon Italian seasoning
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
2 tablespoons fresh parsley, finely chopped
1 tablespoon extra Parmesan cheese, for serving
Instructions
Preheat oven to 425°F. Line a baking sheet with parchment paper
Rinse potatoes, pat dry, and cut into halves or quarters
In a bowl, mix olive oil, melted butter, garlic, Italian seasoning, salt, pepper, and smoked paprika
Toss potatoes in the mixture until coated, then sprinkle with Parmesan
Spread in a single layer on the baking sheet
Roast for 25 minutes, flip, roast 10-15 more minutes until golden
Sprinkle parsley and extra Parmesan before serving
