Ingredients
3 lbs Yukon Gold potatoes, peeled and cut into 1-inch chunks
1/2 cup unsalted butter
1/2 cup heavy cream (warmed)
4 cloves fresh garlic, minced
2 tablespoons fresh chives, finely chopped
1 teaspoon sea salt (plus more to taste)
1/2 teaspoon freshly ground black pepper
Instructions
Place the potato chunks in a large pot and cover with cold water by at least an inch and add a generous pinch of salt.
Bring to a boil, then reduce heat and simmer for 15–20 minutes until fork-tender.
While the potatoes cook, melt the butter in a small saucepan over low heat.
Add the minced garlic to the butter and sauté for 2 minutes until fragrant but not browned.
Stir in the warm cream to the garlic butter and remove from heat.
Drain the potatoes thoroughly in a colander and return them to the warm pot.
Use a potato masher or ricer to break the potatoes down until smooth.
Gradually pour the warm garlic-butter mixture into the potatoes, folding gently until creamy and well-incorporated.
Season with salt and pepper to taste, and garnish with fresh chives before serving.
Notes
Keep leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of milk to regain creaminess. For a lighter version, replace half the butter with Greek yogurt.
