2 pounds baby yellow or red potatoes, halved or quartered

1/2 teaspoon onion powder
1/4 teaspoon smoked paprika, optional
1 tablespoon fresh parsley, finely chopped

Instructions
Preheat oven to 425°F
Line a large rimmed baking sheet with parchment paper
