1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika, optional
1 tablespoon fresh parsley, finely chopped
1 teaspoon fresh rosemary or thyme, optional
1 tablespoon fresh lemon juice, optional for finishing


Instructions

Preheat oven to 425°F
Line a large rimmed baking sheet with parchment paper
Rinse potatoes, dry completely, and cut into uniform pieces
In a bowl, toss potatoes with olive oil, garlic, salt, herbs, pepper, onion powder, and paprika
Spread potatoes in a single layer on the baking sheet with spacing
Roast for 25 minutes
Flip and roast 10-15 more minutes until crispy and golden
Sprinkle with parsley and lemon juice after roasting if desired
