Ingredients

Scale

5–6 lb bone-in beef prime rib roast
6 tbsp unsalted butter, softened
5 cloves garlic, minced
2 tbsp fresh rosemary, finely chopped
2 tbsp fresh thyme, finely chopped
1 tbsp kosher salt
1 tsp cracked black pepper

Instructions

Remove the beef roast from the refrigerator 1 hour before cooking to allow it to reach room temperature.
In a small bowl, combine the softened butter, minced garlic, rosemary, thyme, salt, and pepper.
Pat the beef completely dry with paper towels.
Rub the garlic butter mixture generously all over the surface of the roast.
Preheat your oven to 450°F (230°C).
Place the roast on a rack in a roasting pan, fat-side up.
Roast at 450°F for 20 minutes to sear the exterior.
Reduce the oven temperature to 325°F (165°C) and continue cooking for approximately 1.5 to 2 hours.
Use a meat thermometer to check the center of the thickest part, aiming for 125°F for medium-rare.
Remove the roast from the oven, tent loosely with aluminum foil, and let it rest for at least 20-30 minutes before slicing.

Notes

Always let the roast rest; it is the essential secret to a succulent and juicy center. Ensure the meat reaches room temperature before cooking for even heat distribution. Store leftovers in an airtight container in the refrigerator for up to 3 days.
