Ingredients
8 ounces spaghetti, linguine, or noodles
3 tablespoons unsalted butter
1 tablespoon olive oil
6 garlic cloves, finely minced
1/4 cup reserved noodle cooking water
1/3 cup grated Parmesan cheese
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes, optional
Instructions
Boil the noodles: Fill a large pot with salted water and bring to a boil. Add noodles and cook until tender but slightly firm.
Save the cooking water: Scoop 1/4 cup starchy water before draining the noodles.
Prep ingredients: While noodles cook, mince garlic and chop parsley.
Make the sauce: In a skillet, heat butter and olive oil until melted. Cook garlic for 1-2 minutes until fragrant.
Combine noodles and sauce: Transfer drained noodles to the skillet. Add noodle water, Parmesan, lemon juice, salt, pepper, and red pepper flakes (if using). Toss until glossy and evenly coated.
Finish with herbs: Stir in fresh parsley and adjust seasoning.
