This vibrant frozen yogurt bark is a healthy yet indulgent treat made with creamy Greek yogurt, fresh berries, crunchy granola, and sweet toppings. Perfect for quick snacks or summer desserts, it’s easy to make and looks stunning.
Ingredients
2 cups plain Greek yogurt, full-fat or low-fat
3 tablespoons honey or maple syrup
1 teaspoon vanilla powder
1/2 cup sliced strawberries
1/2 cup blueberries
1/4 cup raspberries, gently broken into pieces
1/4 cup granola
2 tablespoons mini dark chocolate chips
2 tablespoons unsweetened shredded coconut
1 tablespoon chopped almonds or pistachios, optional
Pinch of fine sea salt, optional
Instructions
Line a rimmed baking sheet with parchment paper, ensuring it covers the corners.
In a medium bowl, stir together Greek yogurt, honey or maple syrup, vanilla powder, and a pinch of sea salt until glossy and evenly blended.
Spread the yogurt mixture into a 1/4- to 1/3-inch-thick rectangle on the prepared baking sheet.
Scatter sliced strawberries, blueberries, raspberry pieces, granola, chocolate chips, coconut, and nuts over the yogurt, gently pressing larger toppings into the yogurt.
Freeze until firm, about 2 hours, then lift the bark onto a cutting board, slice into 12 pieces, and store as desired.
Notes
Freeze for up to 1 month in an airtight container. For a lower-sugar version, reduce honey/maple syrup to 2 tablespoons. Customize toppings with preferred fruits or gluten-free granola if needed.
