Ingredients
1 sheet refrigerated puff pastry, thawed
4 oz creamy goat cheese, softened
1/2 cup dried figs, finely chopped
1/4 cup chopped walnuts
1 tablespoon honey
1/2 teaspoon fresh thyme leaves
1 egg, beaten (for egg wash)
1/4 cup smoked turkey bacon, finely diced and lightly toasted
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, combine the softened goat cheese, chopped figs, toasted turkey bacon, walnuts, honey, and thyme until a thick paste forms.
On a lightly floured surface, roll out the puff pastry sheet into a large rectangle, about 1/8 inch thick.
Spread the goat cheese mixture evenly over the pastry, leaving a small border at the edges.
Starting from the long edge, roll the pastry into a tight log and seal the edge with a little water.
Slice the log into 1-inch thick rounds using a sharp knife and place them flat on the baking sheet.
Brush the tops with the beaten egg wash.
