Ingredients

Scale

8 thick slices of brioche or challah bread
1 cup pumpkin puree (canned)
4 large eggs
1 cup whole milk
1/4 cup maple syrup
1 teaspoon vanilla extract
2 teaspoons pumpkin pie spice
1/2 teaspoon ground cinnamon
2 tablespoons unsalted butter
8 strips turkey bacon

Instructions

In a shallow baking dish, whisk the pumpkin puree, eggs, milk, maple syrup, vanilla, pumpkin pie spice, and cinnamon until smooth.
Heat a large skillet over medium heat and melt a tablespoon of butter.
Dip each slice of bread into the pumpkin custard for 10 seconds per side.
Place soaked bread into the skillet and cook for 3-4 minutes per side until golden brown.
Cook turkey bacon in a separate skillet until crispy.
Serve warm with an extra drizzle of maple syrup and a sprinkle of cinnamon.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days.
Reheat in a toaster oven to restore crisp edges.
If missing pumpkin pie spice, substitute with a blend of ground ginger, cloves, and extra cinnamon.
