Ingredients
1 bone-in turkey breast (approx. 5–6 lbs)
4 tablespoons unsalted butter, softened
2 cloves garlic, minced
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme, finely chopped
1 teaspoon kosher salt
1/2 teaspoon cracked black pepper
1/2 cup chicken broth
Instructions
Preheat your oven to 375°F (190°C).
Pat the turkey breast completely dry with paper towels to ensure crispy skin.
In a small bowl, combine softened butter, minced garlic, rosemary, thyme, salt, and pepper until smooth.
Gently loosen the skin over the turkey breast and spread two-thirds of the herb butter underneath, rubbing the remaining butter over the outside.
Place the turkey in a roasting pan and pour chicken broth into the bottom of the pan.
Roast for 60 to 75 minutes, or until the thickest part of the breast reaches 165°F (74°C).
Let the turkey rest for at least 15 minutes before carving to allow juices to redistribute.
Notes
Keep leftovers in an airtight container in the refrigerator for up to 3 days. If the skin is not browned enough, broil for 2-3 minutes at the end. Never skip the resting period as it is essential for juiciness.
