Ingredients

Scale

1.5 lbs ground beef
1 medium yellow onion, diced
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (14.5 oz) diced tomatoes with green chilies
1 can (15 oz) whole kernel corn, drained
1 packet (1 oz) taco seasoning
1 tablespoon chili powder
4 cups beef broth
Optional toppings: shredded cheddar cheese, sour cream, cilantro, tortilla strips

Instructions

Place your large soup pot over medium-high heat and brown the ground beef, breaking it apart with a wooden spoon.
Add the diced onion to the pot and sauté for 3-5 minutes until soft and translucent.
Add the minced garlic and cook for 60 seconds until fragrant.
Stir in the taco seasoning and chili powder, coating the beef mixture thoroughly.
Pour in the beef broth, undrained diced tomatoes, rinsed beans, and corn, stirring well to combine.
Bring to a gentle boil, then reduce heat to low, cover, and simmer for 15-20 minutes.
Ladle into bowls and serve warm with your preferred toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors develop further the next day. This soup is also freezer-friendly; store in a freezer-safe bag for up to 3 months and thaw in the refrigerator overnight before reheating.
