Ingredients
1 pound lean ground beef
1 tablespoon olive oil
1 small yellow onion, diced
2 cloves garlic, minced
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1/3 cup water
1 tablespoon tomato paste
3 cups cooked rice
2 cups shredded romaine lettuce
1 cup cherry tomatoes, halved
1 cup canned black beans, drained
1 cup corn kernels
1 avocado, diced
1/2 cup shredded cheddar cheese
1/4 cup sour cream
1/4 cup salsa
2 tablespoons cilantro
1 lime, wedged
Instructions
Prep toppings: Chop onion, mince garlic, halve tomatoes, dice avocado, chop cilantro.
Heat skillet over medium heat with olive oil.
Add onion; cook 3 minutes until softened.
Add garlic; cook 30 seconds.
Add beef; cook 5-7 minutes until browned.
Stir in chili powder, cumin, paprika, oregano, salt, pepper, red pepper flakes.
Add water, tomato paste, and drained black beans; simmer 5 minutes.
Serve beef mix over rice, top with lettuce, tomatoes, corn, avocado, cheese, sour cream, salsa, cilantro, and lime.
Notes
Use halal ground beef if preferred
