4 large bell peppers (any color), tops removed and seeded
1 lb lean ground beef
1 cup cooked white rice
1 small yellow onion, diced
2 cloves garlic, minced
1 can (15 oz) tomato sauce
1 tsp dried Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 cup shredded cheddar cheese


Instructions

Preheat your oven to 375°F (190°C) and prepare the peppers by removing tops and seeding them.
In a large skillet over medium-high heat, brown the ground beef with the diced onions for 6-8 minutes until browned.
Add the minced garlic and cook for 1 minute until fragrant, then drain any excess fat.
Stir in the cooked rice, half of the tomato sauce, Italian seasoning, salt, and pepper until well combined.
Stand the peppers upright in a 9×9 inch baking dish and fill each generously with the beef and rice mixture.
Pour the remaining tomato sauce around the base of the peppers in the dish.
Cover with foil and bake for 30 minutes.
Remove the foil, sprinkle the tops with cheddar cheese, and bake for another 10 minutes until the cheese is melted and bubbly.

Notes

Keep leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven. You can swap ground beef for ground turkey or chicken if you prefer a lighter profile.
