A no-bake, layered dessert featuring fresh strawberries, creamy pudding, and graham crackers for a refreshing and colorful treat ready in 10 minutes. Naturally sweet, ideal for summer gatherings or a quick indulgence.
Ingredients
2 pints fresh strawberries, hulled and sliced
1/4 cup granulated sugar (or maple syrup for refined sugar-free)
1 tsp fresh lemon juice
1 tsp pure vanilla extract
1 cup whipped topping (homemade whipped cream or dairy-free alternative)
1 cup vanilla pudding (instant, prepared with plant-based milk if needed)
1 sleeve graham crackers (or gluten-free cookies for GF option)
Instructions
Add sliced strawberries, sugar, lemon juice, and vanilla extract to a large bowl. Stir gently until berries are coated. Set aside for 8–10 minutes to let juices release.
Prepare vanilla pudding according to package directions using plant-based milk if needed. Once thickened, fold in half of the whipped topping for extra fluffiness.
Layer the bottom of your 9×13-inch baking dish with a single row of graham crackers, breaking pieces as needed to fit.
Spread half of the pudding mixture over the graham crackers, followed by half of the strawberries and their syrup.
Repeat layers: graham crackers, remaining pudding, and top with the remaining strawberries and syrup.
Finish with the remaining whipped topping and garnish with extra strawberries or crushed graham cracker crumbs.
Chill for at least 30 minutes before serving.
Notes
Store in an airtight container in the refrigerator for up to 24 hours, but consume within 4 hours to prevent graham crackers from softening.
Make it dairy-free by using coconut-based whipped cream and a vegan vanilla pudding mix.
For a gluten-free version, substitute graham crackers with gluten-free cookies.
Best served chilled to maintain texture and flavor.
