2 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
½ teaspoon salt
1 ½ cups milk (any kind)
2 large eggs
6 tablespoons unsalted butter, melted
1 cup pumpkin puree (not pumpkin pie filling)
Maple syrup, for serving
Optional toppings: whipped cream, chopped pecans, powdered sugar


Instructions

Preheat your waffle iron according to manufacturer’s instructions. Lightly grease if necessary.
In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, cloves, and salt.
In a separate bowl, whisk together milk, eggs, and melted butter until smooth.
Pour the wet ingredients into the dry ingredients. Stir gently until just combined; a few lumps are okay.
Gently fold in the pumpkin puree until evenly distributed.
Pour about ½ to ¾ cup of batter (depending on your waffle iron size) onto the hot waffle iron.
Cook until golden brown and cooked through, following your waffle iron’s guidelines.
Repeat with the remaining batter.
Serve hot with maple syrup and your favorite optional toppings.

Notes

Ensure you use pumpkin puree, not pumpkin pie filling, as the latter contains added sugars and spices.
The batter should be thick but pourable. Adjust milk slightly if too thick or too thin.
For crispier waffles, you can sometimes slightly undercook them and then place them in a single layer on a baking sheet in a low oven (around 200°F/95°C) while you finish the rest.
