Ingredients
1/2 cup unsalted butter, melted
2 cans sliced peaches in juice, 15 ounces each, drained, or 4 cups sliced fresh or frozen peaches
1 tablespoon lemon juice
1 cup all-purpose flour
3/4 cup granulated sugar
1 tablespoon light brown sugar
2 teaspoons baking powder
1/4 teaspoon fine salt
3/4 cup whole milk
1 teaspoon alcohol-free vanilla flavoring
1 teaspoon ground cinnamon, divided
1/8 teaspoon ground nutmeg, optional
1 tablespoon coarse sugar, optional for topping
Instructions
Preheat the oven to 350°F. Place the rack in the center of the oven.
Pour the melted butter into a 9×13-inch baking dish and tilt it to coat the bottom.
In a medium bowl, combine the drained peaches, lemon juice, 1/2 teaspoon cinnamon, and optional nutmeg.
In another medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, and remaining 1/2 teaspoon cinnamon for about 20 seconds.
Pour in the milk and alcohol-free vanilla flavoring. Whisk just until the batter is smooth.
Pour the peach mixture into the prepared baking dish.
Spread the batter over the peaches, then sprinkle optional coarse sugar on top.
Bake for 35-40 minutes until the topping is golden and the cobbler is bubbling.
Let it cool slightly before serving warm.
Notes
Use canned peaches for convenience, but fresh or frozen will provide a sweeter flavor.
Sprinkle a little extra cinnamon or coarse sugar for more texture and flavor.
