0.5 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
0.25 cup milk
0.25 cup all-purpose flour (for streusel)
0.25 cup brown sugar (for streusel)
1 teaspoon ground cinnamon (for streusel)
2 tablespoons unsalted butter, softened (for streusel)


Instructions

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
In a small bowl, combine flour, brown sugar, cinnamon, and butter for the streusel using a fork until crumbly.
In a large bowl, whisk together the flour, baking soda, baking powder, pumpkin spice, and salt.
In a separate medium bowl, whisk the pumpkin puree, granulated sugar, brown sugar, oil, eggs, vanilla, and milk until smooth.
Pour the wet ingredients into the dry ingredients and stir with a spatula just until combined.
Divide the batter evenly into the muffin liners and sprinkle the prepared streusel over the top.
