Ingredients
1 lb firm white fish fillets (cod, halibut, or snapper), cut into bite-sized chunks
2 tablespoons extra virgin olive oil
1 medium yellow onion, finely diced
3 cloves garlic, minced
1 can (14 oz) fire-roasted diced tomatoes
4 cups low-sodium vegetable or chicken broth
1/2 teaspoon smoked paprika
1/2 cup fresh parsley, chopped
1 tablespoon fresh lemon juice
Salt and black pepper to taste
1 cup chopped spinach or kale (optional)
Instructions
Heat the olive oil in a large soup pot or Dutch oven over medium heat.
Add the diced onions and sauté for about 5 minutes until soft and translucent.
