Ingredients

4 cod fillets (6 oz each)
1 cup panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs, lightly beaten
1 tsp garlic powder
1/2 tsp paprika
Salt and black pepper to taste
3 tbsp olive oil
1/2 cup mayonnaise
2 tbsp finely chopped dill pickles
1 tbsp fresh dill, chopped
1 tbsp fresh lemon juice
1 tsp lemon zest


Instructions

Combine mayonnaise, chopped pickles, fresh dill, lemon juice, and zest in a bowl; refrigerate.
Prepare three bowls: one with flour, salt, and pepper; one with beaten eggs; and one with panko, garlic powder, and paprika.
Pat cod fillets dry, then dredge in flour, dip in eggs, and press firmly into panko mixture.
