4 fresh cod fillets (approx. 6 oz each)
1 cup panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs, lightly beaten
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt and black pepper to taste
3 tablespoons avocado oil
1/2 cup mayonnaise
2 tablespoons finely chopped dill pickles
1 tablespoon fresh lemon juice
1 teaspoon fresh dill, minced
1/4 teaspoon onion powder


Instructions

Pat the cod fillets completely dry with paper towels and season both sides lightly with salt and pepper.
Prepare a dredging station: flour in one bowl, beaten eggs in a second, and panko mixed with garlic powder and paprika in a third.
Dredge each fillet in flour, shake off excess, dip into the egg, and press firmly into the panko mixture until evenly coated.
Heat avocado oil in a large skillet over medium-high heat until shimmering.
Cook the cod for 3 to 4 minutes per side until golden brown and the fish flakes easily with a fork.
While the fish cooks, combine all tartar sauce ingredients in a small bowl until smooth.
