6 medium apples (about 2.5 lbs), peeled, cored, and sliced
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1 cup rolled oats (not instant)
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, cold and cut into cubes


Instructions

Preheat oven to 375°F (190°C).
Peel, core, and slice your apples into roughly 1/4-inch thick pieces. Place them in a large mixing bowl.
Add the granulated sugar, cinnamon, nutmeg, and lemon juice to the apples. Toss gently until evenly coated.
Pour the apple mixture into your baking dish and spread evenly.
In a separate small mixing bowl, combine the rolled oats, flour, brown sugar, and salt. Stir to combine.
Add the cold, cubed butter to the dry oat mixture. Use your fingers, a pastry blender, or two forks to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
Sprinkle the oat topping evenly over the apples in the baking dish.
Bake for 40-45 minutes, or until the topping is golden brown and the apples are tender and bubbling.

Notes

For an extra layer of flavor, you can add a pinch of ginger or cardamom to the apple mixture. Serve warm with vanilla ice cream or whipped cream. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
