Ingredients
2 cans (15 oz each) whole kernel corn, drained
1 can (15 oz) cream-style corn
1 cup sour cream
1/2 cup melted unsalted butter
1 box (8.5 oz) corn muffin mix
1 cup shredded cheddar cheese
1/2 cup cooked, finely chopped smoked beef strips
Instructions
Preheat your oven to 350°F (175°C) and lightly grease a 9×13 baking dish with non-stick cooking spray.
In a large mixing bowl, stir together the drained whole kernel corn, cream-style corn, sour cream, and melted butter.
Gently fold in the corn muffin mix until just combined, being careful not to overmix.
Fold in the shredded cheddar cheese and the chopped smoked beef strips.
Pour the mixture into the prepared baking dish and smooth the top with a spatula.
Bake for 40 to 45 minutes until the top is golden brown and the center is set.
Let the casserole stand for 5 minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave or cover the dish with foil and heat at 300°F. For a lighter version, swap sour cream for plain Greek yogurt. If smoked beef is unavailable, turkey bacon is an excellent substitute for that savory, smoky flavor.
