Ingredients

Scale

1 lb lean ground beef
1 medium yellow onion, diced
2 cloves garlic, minced
2 cans (15 oz each) pinto beans, rinsed and drained
1 can (15 oz) black beans, rinsed and drained
1 can (28 oz) diced tomatoes with juices
1 cup frozen corn kernels
3 cups beef broth (low sodium)
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp smoked paprika
Salt and black pepper to taste

Instructions

Place your Dutch oven over medium-high heat and cook the ground beef until browned, breaking it apart with a spoon.
Drain any excess fat from the pot.
Add the diced onion to the beef and sauté for 3-5 minutes until soft.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the diced tomatoes, beef broth, pinto beans, and black beans.
Stir in the chili powder, cumin, and smoked paprika until well combined.
Bring the soup to a gentle boil, then reduce heat to low.
Simmer uncovered for 15-20 minutes to allow flavors to meld.
Stir in the frozen corn during the last 5 minutes of cooking.
Season with salt and pepper to taste and serve hot.

Notes

Storage: Keep leftovers in an airtight container in the refrigerator for up to 4 days. This soup tastes even better the next day as the spices continue to develop.
