Ingredients
1 1/2 pounds boneless, skinless chicken thighs, cut into thin strips
3 tablespoons olive oil
2 tablespoons fresh lemon juice
3 cloves garlic, finely minced
1 1/2 teaspoons ground cumin
1 teaspoon smoked paprika
1 teaspoon ground coriander
1/2 teaspoon turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon onion powder
1 teaspoon kosher salt
1/4 teaspoon black pepper
3/4 cup plain Greek yogurt
1 tablespoon lemon juice
1 tablespoon olive oil
1 small garlic clove, grated
1 tablespoon chopped fresh parsley
1/4 teaspoon salt
1–2 tablespoons water
4 large flour tortillas or flatbreads
1 cup shredded romaine lettuce
1 cup diced cucumber
1 cup diced tomato
1/2 cup thinly sliced red onion
1/4 cup sliced pickles
1/4 cup chopped fresh parsley
Instructions
Slice the chicken into 1/2-inch wide strips
Combine olive oil, lemon juice, garlic, cumin, paprika, coriander, turmeric, cinnamon, onion powder, salt, and pepper in a bowl
Cook chicken in a skillet with marinade for 12 minutes until fully cooked
Whisk Greek yogurt with lemon juice, olive oil, grated garlic, parsley, and salt. Thin with water if needed
Layer cooked chicken, lettuce, cucumber, tomato, red onion, pickles, and parsley onto tortillas
Fold or roll wraps tightly
Serve at room temperature or warm
Notes
Use ground coriander substitute for warmed-up flavor if unavailable
