Ingredients
2 cups cooked chicken, shredded or cubed
2 tablespoons unsalted butter
1/2 cup yellow onion, diced
1/2 cup carrots, sliced into rounds
1/2 cup frozen peas
1/4 cup all-purpose flour
1 1/2 cups chicken broth
1/2 cup heavy cream
1/2 teaspoon dried thyme
Salt and pepper to taste
1 package refrigerated pie crusts
1 egg, beaten
Instructions
Preheat your oven to 400°F (200°C).
Roll out your bottom pie crust and place it into the pie dish.
In a large skillet over medium heat, melt the butter and add the diced onion and carrots, cooking for 5 minutes until translucent.
Sprinkle the flour over the vegetables and stir constantly for 1 minute.
Gradually whisk in the chicken broth and heavy cream until the sauce thickens and becomes glossy.
