Ingredients
2 tbsp olive oil
1 medium yellow onion, diced
3 medium carrots, sliced into rounds
2 celery stalks, sliced
3 cloves garlic, minced
8 cups low-sodium chicken broth
2 cups cooked chicken breast, shredded
8 oz egg noodles
1 tsp dried thyme
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Heat the olive oil in a large pot over medium heat.
Add the onions, carrots, and celery and cook for 5–7 minutes until softened.
Add the minced garlic and thyme, stirring for 1 minute.
Pour in the chicken broth and bring to a gentle boil.
Stir in the egg noodles, reduce heat, and simmer for 8–10 minutes.
Fold in the shredded chicken and cook for 2 minutes.
Season with salt and pepper, stir in fresh parsley, and serve.
Notes
Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. Noodles will absorb broth, so add more when reheating. Use rotisserie chicken to save time. Add spinach for greens or red pepper flakes for a spicy kick.
