Ingredients
1 lb lean ground beef
1 small onion, diced
2 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1 tsp dried oregano
10 small flour or corn tortillas
2 cups red enchilada sauce
2 cups shredded cheddar or Monterey Jack cheese
1/4 cup fresh cilantro, chopped
Optional: Diced tomatoes or sour cream for topping
Instructions
Heat a large skillet over medium heat and sauté diced onion for 3–5 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Increase heat to medium-high, add ground beef, and cook until fully browned; drain excess fat.
Stir in chili powder, cumin, oregano, and 1/2 cup of enchilada sauce to the beef mixture.
Spread a thin layer of enchilada sauce on the bottom of a 9×13 inch baking dish.
Spoon beef mixture and a pinch of cheese into each tortilla, roll tightly, and place seam-side down in the dish.
Pour remaining sauce over the enchiladas and top with the remaining cheese.
Bake at 375°F (190°C) for 20 minutes until the cheese is bubbly and golden.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven. You can assemble the enchiladas ahead of time and keep them covered in the fridge before baking.
