Ingredients
2 lbs (900g) boneless, skinless chicken breasts
1 cup all-purpose flour
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs
1 cup panko breadcrumbs
4 hamburger buns
1 medium onion, diced
Lettuce, tomato, cheese slices, and optional toppings
Instructions
Dice onion into small, even cubes and cook in a pan until fragrant
In a separate bowl, whisk together flour, paprika, garlic powder, salt, and pepper. Dip each chicken breast into the flour mixture, then the eggs, and finally the panko breadcrumbs, pressing the crumbs onto the chicken to help them stick
Heat oil in a large skillet or frying pan and cook chicken breasts for 5-6 minutes per side, until golden brown and cooked through
Toast hamburger buns
Assemble burgers by spreading sauce on the bottom bun, adding cooked chicken, lettuce, tomato, cheese, and toppings, then topping with the top bun and serving immediately
Notes
For extra crispiness, chill breaded chicken for 30 minutes before cooking
Cook in batches to avoid overcrowding the pan
Store in an airtight container in the refrigerator for up to 2 days
